Mexican restaurant group confirms opening of 17th UK restaurant in Brackmills, Northampton, led by first time hospitality franchise partner Caleb Slater

The new restaurant, located in one of Northampton’s busiest business and retail districts, will serve Zambrero’s modern Mexican menu of burritos, bowls, tacos, nachos and quesadillas, strengthening its presence in the Midlands and demonstrating the brand’s commitment to attracting the next generation of franchise entrepreneurs as it works towards its initial goal of opening 100 UK restaurants by 2030.

Since launching its UK franchise growth strategy in July 2025, the business has continued to grow its footprint across London, Birmingham, Manchester, Reading, Essex, Glasgow, Basingstoke and now Northampton, as it builds towards becoming one of the UK’s fastest-growing QSR franchise brands.

Globally, Zambrero has more than 350 restaurants in Australia, Ireland, New Zealand, the USA, and the UK, and is the largest Mexican restaurant franchise in Australia, New Zealand and Ireland.  It is aiming to open an initial 100 restaurants in the UK by 2030 in a growth drive through its franchise programme.

At the heart of the Zambrero offering is its successful Plate 4 Plate humanitarian initiative. Every time a burrito or bowl is purchased at any of its restaurants, Zambrero sends a nutritious meal to someone in need in the developing world via its charity partner, Rise Against Hunger℠. The combination of delicious, freshly prepared food and giving back is why Zambrero call themselves Feel Good Mex.

Emily Teh, CEO of Zambrero UK, said: “Caleb is exactly the kind of ambitious entrepreneur we are looking to partner with as we continue expanding Zambrero across the UK. He’s built an impressive business at a remarkably young age and brings the drive, commercial mindset and long-term ambition that fits perfectly with our franchise model.

“Brackmills is another important step in our national growth journey, bringing Feel Good Mex to a thriving business community while creating local jobs and supporting our mission to help end world hunger through Plate 4 Plate. We are excited to welcome Caleb to the Zambrero family and look forward to supporting him as he grows with the brand.”

Caleb Slater, meanwhile said: “Opening a Zambrero restaurant has been something I have been working towards for a long time. As well as a love for the food, which goes without saying, I have always wanted to build businesses that create opportunities for people while delivering great experiences for customers.
